BACON WRAPPED CHIPOTLE CHEDDAR TURKEY MEATLOAF

INGREDIENTS:

1 pound Dakota44 83% lean ground turkey
1 tablespoon olive oil
1/2 onion, finely chopped
1 clove, garlic
1 tsp Kosher salt
⅛ teaspoon black pepper, plus 1/2 teaspoon
1 egg, whisked
4 tablespoons BBQ sauce
1 chipotle in adobo sauce, pureed
2 teaspoons adobo sauce
1/3 cup panko breadcrumbs
3 ounces cheddar cheese, small diced
4-5 slices of bacon

DIRECTIONS:

Preheat oven to 350°F. Line a baking sheet with aluminum foil and spray with nonstick cooking
spray. In a medium saute pan, warm olive oil over medium-high heat. Add onions, garlic, ¼ tsp salt, ⅛ tsp black pepper, and saute for about 4 minutes until tender and translucent. Set aside to cool slightly. In a large mixing bowl, combine the eggs, onion mixture, BBQ sauce, chipotles, adobo sauce, 1 teaspoon salt, 1 teaspoon pepper, panko breadcrumbs, ground turkey, and cheddar cheese. Mix until combined. Do not over mix. On the prepared pan, form the meat mixture into a loaf. Spread the remaining 2 tablespoons of BBQ sauce over the loaf and cover with an even layer of sliced bacon. Bake until the internal temperature reaches 160-165°F, about 1 hour to 1 hour 15 min. Let the meatloaf rest 10 minutes before slicing and serving. For extra crispy bacon, place in the oven broiler until extra crispy.
